Add output formatter option for streaming log system

We use a log system for the server that we're going to deploy replibyte, and the progress bar doesn't show up in our logs, so we've got no indication that it's working. Would be ideal to be able to pick a different log format (for example something which prints incremental updates, rather than rewriting the screen)
