Document ConsoleMe Configuration In One Place

Is your feature request related to a problem? Please describe. Currently, there is no single document describing all of ConsoleMe's configuration. Instead you have to piece it together from the provided examples.

Describe the solution you'd like In addition to the examples, having a single document with all the configuration listed like how EKSCTL does it would be super helpful.

eksctl use mkdocs, consoleme use gitbook. I will try at least to start this. BTW: Great suggestion
