[DOC] Remove unrendering latex

There are some latex equations that are not rendering, and out of style with the rest of the document - changed to utf in line with the rest of the document.

I checked on Chrome and Safari, I'm on MacOS Sonoma, with Chrome version 138.0.7204.169 and Safari Version 17.2.1 (
