Add the ability to add custom ConfigItem<T>s

When adding support for custom configs not all values are supported. It would be nice to add custom ConfigItem<T>s for your own configs at the end of ConfigScreen.createItemFromEntry. Maybe as a default function in IModConfigProvider.
