Updated all dependencies and fixing typing issues

  • Updated all dependencies and code accordingly (resolving #56)
  • Dropped support for EOL python 3.7 (resolving #47)
  • Fixed overall typing issues
  • Pass mypy/black/ruff checks and unit tests, should be making CI passing again

This PR pass the unit testing but I still have some more manual testing to do to ensure that I did not break anything, once good it should be good for merging!

@Astropilot Since this is a breaking change, could py3.12 support be also added as part of this PR?
