How does someone use the VNC option for troubleshooting

Yes.

Publish debug VNC port when running in docker (with -p option)
Connect to it with any remote desktop client that supports VNC protocol (it is pretty widely supported). E.g. with vncviewer:
```
vncviewer -encodings 'copyrect tight zrle hextile' container.ip.or.host:5900
```
