Use 'Mocknet' in the getting started docs, readme and examples

Let's use 'Mocknet' in the getting started docs so people don't need a chipnet wallet & chipnet funds

I added mocknet to the 'getting started' docs but we should also consider doing this for the readme and examples

Today we also moved the remaining HodlVault example docs to MockNetworkProvider, and we updated the example files.
