Add challenges and lessons learned (workshop summary)

This is the summary of the workshop discussion on challenges and lessons learned (see #226, with the suggestion to add it in this file).

I struggle a bit to find a good place for it, and I also struggle a bit to determine the value added. The title of the section ("What issues are trainers facing today?") fits, but the items already in the section don't really fit under "Teachers" and don't really help develop the story at the moment.

However, to not lose this information (and to finally delete the file from my Desktop and the notification from my emails), I propose adding it here and rethink the place/shape when looking at the bigger picture.

Does anyone have any better suggestion?
