If it were possible to write custom macros, for example to automatically pre-populate dates or mention users, that would be extremely helpful.

Describe the benefits this would bring to existing BookStack users

Automatic date pre-filling would be a huge advantage for templates; mentioning users in comments or pages would be helpful when documenting something in tables and/or leaving a comment as a hint for another user.

Can the goal of this request already be achieved via other means?

Nope, it's not possible only with Hacks.
