Currently we have shelves feature only, Can we have an Sub-Shelve feature here?

Yes,

Use Naming & Linking to Simulate Sub-Shelves (No Code)

You can create the illusion of sub-shelves:

Create “Main Shelf” and then separate “Sub-shelves” as Books.

Use Book descriptions or internal links (Book Title) to connect them.

e.g.:

📚 Development ↳ Frontend ↳ Backend ↳ DevOps

Your issue is not making clear, what you are actually requesting here. I assume, that your request suggests adding a level in between shelves and books? There is no real term for it, but it could be referred to as board.

During initial research I also came across the discrepancy about how limited bookstack is in its levels. For our case, we were able to make it work, without the need for an additional layer, by naming the books <department>[<supercategory>]. Yet it's not optimal and I'd prefer to have more depth available..

You should have a look into https://github.com/BookStackApp/BookStack/issues/95. Your feature-request appears to be a duplicate or at least heavily related to it.
