documentation: Clarify use of Convert in the standard engine and adapters

Outside of adapters convert should only be used when you can get a full representation back and forward between the target and source of the operation.

Any use of convert that does not follow this principle should be made into a create or a query

This needs to be more clearly stated in the wiki
