Bugfix, detailed docker build logs, robust debugging in deploy script

This PR adds following : Fixes a bug that addresses function rename in graph rag library versions > 2.0 Adds eux flags to deploy script to help make script debugging robust. Adds detailed logging for container building step.

We'll merge this PR in once a new release of the graphrag library has been made and we ensure the accelerator works with the published package.
