It's currently possible to display a custom message after the subscription form was submitted. That setting can be found in the block sidebar:

Tested on Simple – Replicated Tested on Atomic – Unable to replicate

From my testing the "Success message" field is only showing on Atomic sites.

Ah you're absolutely right. That field was hidden from Simple sites in #22283.
