Set default build source encoding to UTF-8

For those of us stil using Windows, it will make sense to have the default source encoding set to UTF-8.

Just wanted to make the same PR :) @AdamBien is it possible to add that line -- not only for Windows but just to get rid of the Maven warning when doing a mvn clean install?
