macOS support has aged out

The universal lipo approach has aged out now that Intel macs are completely EOL'd in macOS Tahoe (and probably earlier - I don't quite remember when the x86 support was dropped out). I tried to hammer in homebrew support in the include and linker path, since that's also how most folks get SDL2 now, but the fact that homebrew only supports one architecture type (Apple Silicon) for newer macOS releases has kind of hosed the rest of the build path.

If this isn't a total dead-end I'll try to see if I can get it working, just raising the issue for now.
